Worried about Mom's eating and what do I do?

I am in the process of getting Medicaid and placing my mom in a memory care unit. The problem I have is that mom only likes a few foods and I have to prod her to eat. I have to stand by her most of the time and mom you need to eat. I am getting so anxious, because I know if she doesn't eat she will lose weight. She had 3 pancakes for breakfast that she did eat but with reminders. For lunch she had a small hamburger and at first just wrapped it back up and then I tried again and she did eat it, but I cringe every time she needs to eat. Then for supper she didn't eat very many bites of meat, vegetables, and baked potato. Of course I told her if you don't eat you won't live mom. She has such a will to live. She is still mobile and can go to the grocery store and out and about with me. Im getting so tired of being responsible for her eating. If she goes to a memory care unit I have the feeling that she will not eat their food and will just lose weight. She does get hungry, so maybe if she is hungry enough she will eat. I just do not know. If she won't eat much and keeps losing weight at the memory care, what will they do? I am in need of some advise.

What she's eating doesn't sound so bad. It's more than I eat most days. I'd need a nap after 3 pancakes.

They will do what they can to offer choices, and they will offer supplements like Boost and Ensure if the MD orders it. The doctor can also order Marinol for appetite enhancement. It works.
