I am in NY and pneumonia is making the rounds here. Call her MD, ask which vaccinations she needs and he can order a visiting nurse as well. AND cwillie is right, company should wash hands when they arrive.
Your profile says you live in New York city...the visiting nurses association of New York provides these services...of course you would have to pay but its worth calling them to ask about it.
If you cannot do that, then cwillie gives you a great option...make sure she doesn't come in contact with sick people and keep up the hand washing, its your best defense. By the way, lots of people don't get the flu shot and don't get the flu...and the flu shot isn't always all that effective (last year's shots were almost completely ineffective). You may decide that it isn't worth the risk of side effects since it may or may not work as it is.
If she never leaves the house then your best protection would be to ensure that you and all her caregivers have had the shot and follow strict hand washing protocols when coming into your home.
