Mom (93) with dementia is hyperventilating 4 and 5 times a day. What do I do?

Apparently hyperventilating is fairly common in Alzheimer's, especially in older women. Certain drugs can also cause hyperventilating.
Google Treating Hyperventilation for several ways to bring breathing under control, such as breathing into a paper bag.
Also, do discuss this with Mom's doctor.
