If Mom is in Independent living, do they not have a dining area where she can go for her meals or have them delivered and pay for the service. Even with lite memory issues, I would consider an AL. Then you know she is getting her meals. Lite memory issues can turn fast into issues she should not be alone.
You can call your County Office of Aging and ask about "Meals on Wheels". Now some Seniors do not care for the food. No salt or spices are used because of different meal requirements. Being a volunteer organization, with a number of clients they are not able to cater to special diets. So those receiving the meals need to realize they need to add salt and pepper. We had a client who thru hers out. The Nurse told her if she wasn't going to eat them then to stop the service because they only can handle so many clients and she was taking a meal someone else could use.
You may want to ask if they know of other services that may charge more but can cater to the individual.
