What to do about dehydration?

Without a lot of info to go by..
Try getting as much fluid in in any way possible.
Soup
Juice
Fresh fruit
Salad
Water in any way possible
Coffee, tea can be diuretics so while you can count them keep in mind they are not a good as other fluids.
As long as the urine is a light color the person is getting enough fluid. (the lighter the color the more dilute it is)
If the problem is the person is having a problem swallowing liquids there are products that will thicken thinner liquids. Thick It is the one I used. You can add as much as is needed to get the consistency you need for the person to safely consume a liquid. I went from nectar consistency to pudding thick in the time I was using it for my Husband.
While ice cream, popsicles, and jello would seem like good ideas as they get to body temperature they melt and are just like a thin liquid so they should be avoided. Pudding would be an option, if you want "ice cream" freeze the pudding a bit.

Can you add a little more detail Debdec? I doubt telling you to offer a variety of drinks more often is the answer you are looking for.
