My mom (91) is experiencing water build up that pours out of her through urination, especially in the mornings. How do we handle this?

As others have suggested, it would be most helpful to have more info.

Is this something completely new?
Does she have swelling in her feet and ankles?

If this issue is something new , I would definitely seek medical advice!

I would cut down on her fluid take at night. And I also wonder if she is on a water pill.

Is your mother taking diuretics? What medication is she on? Does your mother have any edema in legs or feet? Is she experiencing shortness of breath. This is really something you should be taking up with your Mother's doctor as soon as possible.

If she is retaining fluids you may want to talk to her Dr. as it could be a variety of things causing it, from heart failure to kidney disease. Or it could be something as simple as she's eating too much salt. You've not given us much info to go on, but I would definitely talk to her Dr. as he/she can put her on diuretics if needed.
And like cwillie said below, make sure she's wearing her Depends, and that you're using waterproof pads, and taking her to use the toilet or bedside commode on a regular schedule. Best wishes.

Is she on fluid pills (diuretics)? If so you could ask about changing the timing. If she is continent or partially continent you may need to keep her in a pull up or brief until you can get to the bathroom, a bedside commode could make that easier. Taking her to the toilet on a schedule throughout the day - every two or three hours for instance - can also help to cut down on accidents. And covering the mattress and using washable or disposable bed pads can help contain things if she is wetting the bed.
