I’m not surprised that high end ccrcs do this, not especially as my spouse works at one. It’s by anyone’s estimation a beautiful place that looks exactly like a hotel.
If this is the CRCC with various living options then Independent Living usually offers two meals daily. Each Apartment typically has a full kitchen and the resident decides which meals to eat in the dining facilities.
A nursing home only offers 2 meals. I think this should be checked out with the State. I am under the impression nursing homes, especially if state funded, need to provide 3 meals a day. I agree that an AL would be different because residents have a kitchenette. For me, I would pick lunch to skip. Food can be kept in a kitchenette for lunch. Me I just snack. So breakfast and dinner would be enough for me. But then there are facilities that Lunch is the larger meal and dinner smaller. That I would check out.
I wonder if they are actually in the NH section or elsewhere. Very often, IL or AL only provide 2 meals a day and expect residents to prepare their own simple breakfast or lunch.

If this is really true, I'd skip dinner and get Meals on Wheels or take leftovers from lunch to your room for dinner.
