My grandfather is declining rapidly and I have been caring for them in my home. Grandma has dementia and requires 24/7 care. He put my name on bank accounts and I am scared that if something happens to him they will take her from me just because of the money and she is not my blood GMA. They would put her in a home. Can they fight for assets if there is no will but the money to care for her is in my name? I don’t want anyone to take her from me.

If this is not your blood grandmother and there is lots of money in their accounts, you may indeed have worries ahead of you if there are relatives to potentially inherit these funds when grandpa passes. Whoever has POA for grandma can place her in a Memory Care Assisted Living facility if they want to, but that'd spend her money VERY quickly.
So, not knowing or wanting to know all the details of this situation, you may have your hands full coming up here soon. I'm sure "they" can fight for assets if there is no will in place, but if funds are in your name, "theyd" have to get grandpa to handle the finances. It sounds like there is A LOT more to this story than the bit of info you're giving us here!
