The couple said I can stay as long as I want while I get my EBT and SSDI set up to help with bills and groceries.
I can't live with my mom anymore. My physical and mental health are deteriorating rapidly. I need to leave but I don't want to be charge with abandonment.
She's said she want to move back to colombia but I don't know where to begin in anything. Please give me suggestions etc

As far as your mother is concerned, unless you are her POA and she is an elder who is currently physically or mentally HELPLESS, there is no reason you have to remain with her. You are not responsible for your parent unless you are legally (I repeat LEGALLY) her caregiver.
If currently you have been being paid by any governmental institution to care for your mother then you must notify them that you are endangered by her and have left, and that she currently is without care.
If you contact your mother and she says she needs you emergently, tell her to call 911 for transport to the hospital. Do not go to the Hospital. Leave your mother to their care.

If you consider your mother to be "at risk" for some reason, then call APS (Adult Protective Services in your town, or your local Council (or Agency) on Aging. Report her at risk. If you cannot find, online, those numbers, then report her as being alone and at risk to the local police of sheriff's office.

Are you legally responsible for your mother?
Do you have POA or are you her Guardian?
If not you are under no obligation to remain as a caregiver. (If you are acting as her caregiver.)
If she is not safe at home and needs help you can contact APS and they can investigate a vulnerable senior.
You can contact the local Senior Service Center or Department on Aging and see if there is help available for her. '
If there is physical abuse or even verbal abuse that causes you to be concerned about your safety call 911 and tell the dispatcher that you are afraid for your safety.
