Don’t do anything. Let her do what she wants and eat what she wants. She is dying.

Why would you do anything?
Ask yourself what your goal is, given the circumstances.
The circumstances is that your sister had dementia, and if she doesn't die of something else first, it will kill her. That is the fact.
Now we are down to what to do, and what your goal is.
My goal would be to keep sister comfortable and happy as she can be given this dreadful diagnosis.
She has very little left to her in terms of choice.
One thing she does have, hopefully, is choice in what she eats.
So I would allow her to eat anything she likes.
There is just a chance, if you are concerned about nutrition, and other than giving her a gummy bear vitamin daily, that you can incorporate some good nutrition for her. Say a chocolate shake made with ensure? Ice cream? Puddings and gelatins?

I think that this is going, long term, to be perhaps the least of your worries ongoing.
I wish you luck. If quality of life is the concern, as I think it should be, you will not push at your sister over nutrition. It will mean very little in the long run.
I wish you both the best.

Call hospice today and ask them to come out and do an evaluation. You don't have to wait for her doctor to request it, as they will contact her doctor if deemed necessary.
You will feel much better having extra sets of eyes on your sister, and the hospice nurse can better keep you informed as to what is going on with your sister than we can.

Please call a Hospice company for support and guidance in this.

My MIL only ate one piece of cheese, an Ensure and a hard boiled egg per day. She lived over 1 year with this diet. Incredible, we were told she had maybe 6 weeks at the outset, but she proved them wrong. She also slept 18-20 hrs per day.

Even though the family had the worst rated Hospice Company in the state working for her, it worked out all right. This isn't something you want to handle alone.

It sounds like she's in the late stages, yes. Call sisters PCP for a hospice evaluation right away.

Best of luck with a difficult situation.
