Are you talking about one you have or will hire privately or through an agency?
Through an agency they will probably accept a credit card or will do a monthly debit from your bank.
Private, that would be a check. Do NOT pay in cash. If you must pay in cash get a signed receipt indicting the number of hours and the pay. this would be to prove that the person actually got paid and that the pay was for caregiving services.
And if you hire privately have a Caregivers Contract. It should indicate the duties, the number of hours and the pay per hour. there are other details it should include I am sure you can find one on line to base yours off of.

What do you mean? Are you not able to write out a check and hand it to them?

More information would be helpful.
