I could insist she come on vacation with our family but that could be miserable. I don't think she feels safe being alone in our home. I have a girl that comes once a week to take her shopping but I think she's too busy to stop by everyday and bring her supper. Mom has money to pay to go to assisted living for a week but I don't know if there are places that will do that. She says she would rather do that than go on vacation with us. She has lived in independent living before.

Dumb question, but have you tried calling and asking? To me, that seems the best place to start, as it’s doubtful any of us are from your area and have an intimate knowledge of it’s resources…

ALs usually have respite care if they have a room available.

Your Mom has a Dementia. I think leaving her home, with care, is wise. People suffering from Dementia do not do well in strange places. And they are unpredictable.

We have Atria here. It's a nationwide chain. They and pretty much anywhere else GLADLY welcome respite-care clients as it may represent a marketing opportunity. An audition. Even if she's not ready for AL just yet, a positive experience then steers the family where to go if and when there comes a time.
