Does she have a medical diagnosis of cognitive impairment and/or memory loss? Is anyone her PoA? If she gets taken to such a place whoever signs the paperwork is liable for the bill. Also, not sure if she can go into such a place without an actual diagnosis, so be sure to ask lots of questions in advance.

Unfortunately any Respite will be Private Pay.
Most Memory Care facilities will do a Respite Stay. Many with the hope that if the need or time comes you will select that place.
There will be things that need to be done, a doctors note that she is in good health. And quite possibly a TB Skin Test or even 2 depending on where you live. There is a blood test that can be done and only once so it eliminates the need to return to have the test read.
If your Mom is on Hospice Hospice does does cover Respite stay so if mom might qualify for Hospice that might be a way to get a Respite stay covered.
