My question is what are the differences and similarities between Memory Care & Nursing Homes? She currently needs no nursing, but may require it down the road.

Memory care is basically a Locked ward where people can Not get outside . There are Usually Memory care Floors inside the Nursing Home. A Nursing Home is a Place where the client can get 24 / Hour care Like Having Diapers changed , medication and food served . Go To the senior canter and ask them " What Places they would suggest ' and take some Tours . Speak with the Head person running the Place . You can read reviews on YELP .

Nursing Homes and MC is quite similar, often enough.
Much depends on WHICH MC and WHICH Nursing Home, and only you can research that for your own area.

Nursing Home isn't often used any more as a term, and it certainly doesn't indicate "Nursing services" are available. That would be a SNF or Skill Nursing Home which isn't for her right now. Usually now we say "LTC" or Long Term Care facility.

Most facilities are locked facilities with usually two persons per room. But as I say, things vary WIDELY as to cost and what's available. I wish you luck and hope there's family to assist you in the choices. You face lots of questions about her assets and about her needs. And you should start a list with your OWN questions.
